We have an extensive selection of ingredients needed for fine quality baking, including high quality Belgian chocolate, locally grown dried fruits, a wide variety of nuts featuring Oregon grown hazelnuts, and top quality pure extracts.
Classic Foods features fine Belgian chocolate in discs known as galets in Dark (58%), Milk (32%) and White. These have a large percentage of cocoa butter so they have good melting characteristics, making them ideal for couverture. We also have drinking chocolates from Ibarra of Mexico - with its characteristic cinnamon and almond flavor - and La Taza of Spain, often used to flavor flan, to make hot cocoa or pudding.
Locally grown dried fruits we offer include Bing and Tart Red Cherries, Blueberries, Huckleberries, Raspberries and Strawberries. From California come Calimyrna and Black Mission Figs, Black Zante Currants, pitted Dates and Golden and Thompson Raisins. We feature New England dried Cranberries and wild gathered freeze-dried Maine Huckleberries. Tropical fruits include Papaya, Mango and Pineapple.
The best vanilla beans are known as bourbon and come from Madagascar. Our extra-long gourmet beans are fresh and moist, never dried out.
We feature 100% pure Bourbon Vanilla Extract from Nielsen-Massey. Nielsen-Massey is famous in the industry for using the ripest, most flavorful beans, and for using a costly cold water extraction process which assures their product is the best available. By law all producers must use the same proportion of vanilla beans in their formulas; however, many producers use a cheaper blend of low quality beans with less flavor than true Madagascar Bourbon vanilla. We also carry other pure extracts as well including Lemon, Orange and Almond.
Classic Foods offers a large selection of raw shelled nuts available in convenient one pound flavor barrier bags, so you don't have to buy more than you'll be able to keep fresh. We have four styles of locally grown Oregon Hazelnuts including Whole, Sliced, Chopped and Fluff (meal). We also feature a wide variety of domestically grown nuts including Almonds, Pecans, Pistachios, and Walnuts. Imported varieties include Pine Nuts, Cashews, Macadamias, Peanuts and Pepitas (shelled pumpkin seeds). |
