Ravioli

Classic Foods is Oregon's artisan ravioli specialist! We have 11 standards to choose from which are always available. In addition to various cheese based varieties we also feature our best-selling Butternut Squash Gorgonzola ravioli made with organic locally grown squash; Dungeness Crab & Artichoke Hearts made with fresh local crab; Manhattan Smoked Salmon made with wild Chinook salmon; and Wild Mushroom made with porcini, chanterelle, boletus and oyster mushrooms.

Our seasonal ravioli are made in house with fresh, seasonal organic ingredients sourced from local farms and farmer's markets. By working directly with growers and foragers we are able to get the best produce at the peak of season, and since we run small batches we can really pay attention to detail. Seasonal offerings might include house-dried heirloom tomatoes or grilled corn in late summer, grilled pears and heirloom apples in fall, wild mushrooms and truffles in winter, local artisan cheeses, and root vegetables and greens in the early spring. We use soft dough for our ravioli made of semolina and durum wheat, fresh cage-free eggs and filtered water. Shapes available include Oval (approximately 24 per pound), Square (36 per pound), and Mini Square (64 per pound). They are packed in biodegradable PLA (corn starch based resin) one-pound containers. You'll get 3-4 dinner portions or 6-8 appetizer portions per pound.

Many restaurants feature our ravioli as an easy vegetarian entrée since all you need to do is boil them in salted water for about three to four minutes before adding a simple sauce. These are full flavored ravioli and they don't require much effort to make a great dish.
