House Made Frozen Extruded

Classic Foods is proud to feature short cut extruded pastas (pasta corta) made with machinery from Italpast of Fidenza from the Emilia Romagna region.

Our fresh pasta dough is made with semolina and filtered water only, then cut on bronze dies, giving it the traditional texture typical of the best Italian extruded pasta. Pasta made in this traditional way will have a rougher surface texture, which allows the sauce to adhere better to the noodle.

Our extruded pasta is made in small batches, packed into 2 lb. bags, then quickly frozen. This pasta freezes well due to its low moisture content.

Many shapes are available in plain flavor (in the case of dried pasta this is usually labeled "100% Semolina") by the 2 lb. bag including orzo, radiatore, casarecci, penne rigati, rigatoni, small seashells and giant seashells for stuffing.

We also carry Orzo and Spirelli in Tri Color available by the 2 lb. bag. The three mixed colors are white/plain, green/spinach and red/tomato; these are representative of the Italian flag.

Other shapes and/or flavors are available only as special orders and require a minimum 16 lb. batch (48 lb. for Tri Color).
