Chocolate
Classic Foods features fine Belgian chocolate in discs known as galets in Dark (58%), Milk (32%) and White. These have a large percentage of cocoa butter so they have good melting characteristics, making them ideal for couverture. We also have drinking chocolates from Ibarra of Mexico - with its characteristic cinnamon and almond flavor - and La Taza of Spain, often used to flavor flan.
